Cane proofing baskets have been manufactured by Herbert Birnbaum in Germany since 1847. The natural material of the rattan palm absorbs moisture from the dough and regulates the temperature - this ensures an optimal proofing process. Depending on your preference, you can use the cane proofing basket with or without a lining. In our shop you can find matching linen proofing basket inserts for the cane proofing baskets. Alternatively, you can also use our cotton proofing basket lining or use it additionally to cover the proofing basket. Without a cover, the cane fermentation basket also is suitable for cold proofing in the fridge. Here you can find the cane proofing basket in round. With the linen cover it also makes a very nice bread basket avoiding a sea of crumbs.

Weight Guidelines for Cane Proofing Baskets

The weight information refers to the weight of bread with over 50% rye flour content after baking. For other bread mixtures with a higher proportion of a grain with more volume development, such as wheat and its original forms spelt, einkorn, emmer and kamut, you should choose the next larger form. For dense multigrain breads, the next smaller form should be used.

The weight loss of bread dough during baking is approximately 10-20%, depending on the bread and baking process.

Care instructions

The cane proofing basket is only suitable for proofing. The bread must not be baked in it under any circumstances!

  • I recommend using the cane proofing baskets with a cover or lining them with a cloth so that you don't have to spray them with release wax.
  • Since the rattan proofing basket absorbs water from the bread dough, it must be completely dried after use to prevent mold. To do this, you can place it in the oven with residual heat (but not directly on a hot baking sheet).
  • When dry, the cane proofing baskets can be stacked and stored in a well-ventilated place.
  • From time to time you can clean cane proofing baskets with water, afterwards they need to dry completely.

          A cotton proofing basket cover has two uses. You can either use it as a lining for your proofing basket so that the dough lies on the cloth and not directly on the proofing basket (useful for rattan proofing baskets) or to cover a proofing basket with dough in it to prevent the dough from forming a crust and drying out.

          I also like to use the elastic cotton covers to store my wood pulp proofing baskets, as they are breathable but prevent flour residues from ending up in the cupboard.
