Baker's Linen
What is baker’s linen?
Baker's linen is a strong linen cloth that is used for proofing baguettes and rolls. Due to the high weave density of the baker's linen, it can be folded in pleats to give your formed dough pieces stability during proofing. Wrapped in the baker's linen, the dough is protected from drafts and from drying out.

Application:
- Lightly flour the baker’s linen – use a bit more flour for moist dough
- Place the dough pieces on the baker's linen and form a pleat between them that is as high as the dough pieces
- Cover the dough with the ends of the baker's linen or use another cloth to protect the dough pieces from drying out while resting.
Baker's linen is also available as an insert for rattan proofing baskets in round or oval shapes .

Care instructions
- Before placing the dough pieces on the linen, dust with flour
- Washable at up to 60 °C
- Iron damp after washing
