Wood pulp proofing baskets offer the perfect conditions for consistent dough proofing. They absorb excess moisture, retain heat, and when well-floured, allow for easy removal of the proofing dough. Cleaning these baskets is effortless—simply brush them out. Our wood pulp proofing baskets have been crafted by a traditional German manufacturer since the 1920s, using only spruce wood fibers from regional and sustainable forestry.
To cover your proofing dough in the wood pulp proofing basket, I recommend using proofing basket covers made of cotton.

Weight Guidelines for Wood Pulp Proofing Baskets
The weight information refers to the weight of bread with over 50% rye flour content after baking. For other bread mixtures with a higher proportion of a grain with more volume development, such as wheat and its original forms spelt, einkorn, emmer and kamut, you should choose the next larger form. For dense multigrain breads, the next smaller form should be used.
The weight loss of bread dough during baking is approximately 10-20%, depending on the bread and baking process.

Care instructions
The proofing basket is only suitable for proofing. The bread must not be baked in it under any circumstances!
- The wood pulp proofing basket should always be well floured before use so that the dough comes off easily.
- Since the wood pulp proofing basket absorbs water from the bread dough, it has to dry completely after each use to prevent mold.
- If necessary, you can brush off the left over flour with a dry brush. The wood pulp proofing basket should never be cleaned with water.
- When dry, your wood pulp proofing baskets can be stacked and stored in a well ventilated place.

Cleaning your proofing basket is made easy with this brush. The vegan, abrasion-resistant bristles made of plant fibers allow you to quickly clean flour residue from your proofing baskets. The shape of the beechwood handle fits well in the hand helping make quick work of brushing out wood pulp proofing baskets after use. Care instructions
Only use the brush when it is dry, otherwise flour residues can clump and stick together.
A cotton proofing basket cover has two uses. You can either use it as a lining for your proofing basket so that the dough lies on the cloth and not directly on the proofing basket (useful for rattan proofing baskets) or to cover a proofing basket with dough in it to prevent the dough from forming a crust and drying out.
I also like to use the elastic cotton covers to store my wood pulp proofing baskets, as they are breathable but prevent flour residues from ending up in the cupboard.
